Did you know freeze-dried foods retain up to 97% of their nutritional values? Freeze drying is a process in which moisture is removed from a product after it is frozen and placed under a vacuum system, allowing the ice to change directly from solid to vapor without passing through the liquid phase called sublimation. Unlike other methods of food preservation, freeze drying does not shrink or toughen the food, rather it retains the products flavour, colour, and most of it's nutritional value while making for convenient meals for the future. Because of the low temperature used in processing of the foods,the rehydrated product retains much of its original qualities and, best of all, can last up to 25 years if stored properly!
